Award-winning writer and editor Shaun Dreisbach joined EatingWell in 2017 as nutrition & features editor; she covers nutrition, weight loss, sustainability, the environment, industry trends, new research and food policy. She also oversees the front-of-book sections and keeps up with key experts in the field, including those on the EatingWell advisory board.
Shaun has more than 20 years of experience working at and contributing to leading print and digital publications including Glamour, Self, Parents, Real Simple, Working Mother, Dr. Oz The Good Life, Teen Vogue, American Baby, FamilyFun and USA Weekend. She has also authored several nutrition, cooking and weight-loss books for bestselling authors and celebrity nutritionists. As a former gymnast, her profile of Olympic gold medalist Simone Biles certainly ranks among her favorites. But the pieces she’s most proud of are those that can save lives—and actually have—such as features on breast and skin cancers and heart disease. Shaun’s writing has also earned top honors, including awards from the Association of Health Care Journalists and Skin Cancer Foundation and being a James Beard Award finalist in 2017.
Shaun earned a bachelor’s degree in magazine journalism from the S.I. Newhouse School of Public Communications at Syracuse University, where she also minored in sociology and biology—which means she can dissect both pop culture and a frog. Born in rural Pennsylvania, Shaun moved to Lake George, New York, as a teenager. In 2005, after many years living amid the honking whir of New York City, Shaun traded the Manhattan hustle and bustle for idyllic Vermont, where she lives with her husband, their two children and a Boston Terrier named Ollie. On weekends you can find her either cooking up a storm (she loves to challenge herself “Iron Chef” style, seeing what she can concoct using an unfamiliar ingredient as the star) or doing something active, such as skiing, paddleboarding, hiking or swimming.

What does “eating well” mean to me?
Eating well means eating phenomenally tasty food that also happens to be good for you. I am a huge foodie and love to cook, so to me food doesn’t just mean fuel. It’s love, creativity, nourishment, being with friends and family.
The three ingredients I simply couldn’t live without…
Espresso (for my morning lattes), avocados (nature’s butter!) and eggs (the perfect protein!). I eat the latter two for breakfast, lunch and dinner. Good for you and super-versatile! Plus, who doesn’t love putting an egg on it?
My go-to dinner for nights when there’s no plan…
A frittata loaded with whatever veggies we have in the fridge and maybe a bit of cheese and pancetta. Or a tartine with hummus, sprouts, carrots, avocado (natch) and tomato drizzled with aged balsamic and loads and loads of black pepper. Putting an egg on it: optional.
The healthy habit I’ve committed to…
Exercising every day. It keeps me from feeling creaky, is a big mood booster and allows me to eat and drink really well.

I love tomato soup in all forms, but in the summer, I love a good gazpacho, and the piment d'Espelette in this Grilled Tomato Gazpacho recipe gives it a great kick. I always add a ton extra. Heat and spice are my jam.
